Easy Garden Quinoa
- 1 cup quinoa uncooked
- 2 cups vegetable stock low sodium
- 1 1/2 tablespoons vegetable oil or canola oil
- 1/2 cup yellow onion chopped
- 1 small carrots peeled and finely chopped
- 1 clove garlic minced
- 1 pinch seasoning, Mrs Dash or your favorite seasoning blend
- 1 tablespoon italian parsley fresh, chopped
- Rinse and drain the quinoa in cold water 3 times; set aside.
- In a medium saucepan, heat oil.
- Add the onion, carrot and garlic.
- Saute for 2 minutes.
- Add the rinsed and drained quinoa and stir to coat with the vegetables; saute 1 minute.
- Add the vegetable stock and bring to a boil.
- Cover, reduce heat to low and simmer for 20 minutes.
- Remove from heat and add the seasoning mix and chopped parsley.
- Serve hot or at room temperature.
- NOTE: Looks great if you mold the quinoa in a ramekin and garnish with fresh parsley sprigs.
