Spanakopita (Spinach Pie)(Greek)
- 1 lb. fillo
- 2 lb. spinach
- 4 to 5 eggs
- 1 lb. Feta cheese
- 1/4 lb. butter (1 stick)
- 1/2 c. chopped parsley
- 1 bunch scallions and 1 whole onion
- 1/4 c. chopped dill
- 1/4 c. chopped mint
- dash of salt and pepper
- Wash thoroughly and drain the spinach well.
- (May use food processor.)
- Sprinkle with salt.
- Squeeze spinach to drain all water.
- Saute onions, parsley, dill and fennel in a frying pan. Let cool.
- Beat the eggs.
- Cut the cheese, then mix all together with spinach.
- Brush each sheet of fillo with butter and place in pan 8 to 10 layers.
- Put your mixture in pan and add remaining 8 to 10 sheets of fillo on top.
- Brush each with butter as you go along. Fold edges under and bake at 350u0b0 for 1 hour.
- Preparation time: 30 minutes.
