Leola'S Shrimp And Okra Gumbo

  1. Put fresh shrimp in 1 pint of water with 1 teaspoon salt. Cook over medium heat about 5 minutes or until shrimp turn pink. Turn off heat and leave covered 3 minutes.
  2. Drain and reserve liquid for gumbo.
  3. In a large pot with heavy bottom, add flour to heated oil.
  4. Cook and stir constantly, until deep golden brown. Take pot away from heat and quickly add onions and garlic; cook 4 minutes on low heat.
  5. Add bell peppers and bay leaf.
  6. Combine broth with remaining water.
