Leola'S Shrimp And Okra Gumbo
- 1 lb. fresh shrimp, peeled and deveined
- 1 piece bell pepper, cut into small pieces
- 1 bay leaf
- 1 stick celery, chopped
- 1 (8 oz.) pkg. frozen okra, chopped
- 1 clove garlic, mashed
- 4 Tbsp. cooking oil
- 5 Tbsp. all-purpose flour
- 1 medium onion, chopped
- 3/4 c. whole tomatoes
- 1 Tbsp. chopped green onion
- 1 Tbsp. chopped parsley
- 3 1/2 pt. water with shrimp broth
- salt and red pepper
- Put fresh shrimp in 1 pint of water with 1 teaspoon salt. Cook over medium heat about 5 minutes or until shrimp turn pink. Turn off heat and leave covered 3 minutes.
- Drain and reserve liquid for gumbo.
- In a large pot with heavy bottom, add flour to heated oil.
- Cook and stir constantly, until deep golden brown. Take pot away from heat and quickly add onions and garlic; cook 4 minutes on low heat.
- Add bell peppers and bay leaf.
- Combine broth with remaining water.
