Mixed Mushroom Rice (Paula Deen)
- 3 cups chopped mixed mushrooms (white, portobello, shiitake, etc., soak 30 minutes before chopping if using dried mushrooms)
- 1 medium maui onion, diced
- 14 cup butter
- 5 cups cooked white rice, not instant
- Kikkoman soy sauce, to taste
- sea salt, to taste
- fresh ground black pepper, to taste
- 12 cup sliced green onion
- Saute the Maui onion in butter in a skillet until almost soft; then add mushrooms.
- Stir in rice, soy sauce, salt, pepper, and green onions.
- Cook until warmed through.
