Eggplant Parmesan over Spaghetti

  1. Heat oven to 400 degrees F.
  2. Dip each eggplant slice in egg, then in cheese mixture, turning to evenly to coat both sides of each slice.
  3. Place on foil-covered baking sheet sprayed with cooking spray.
  4. Bake 10 min.
  5. or until lightly browned.
  6. Meanwhile, heat marinara sauce and cook spaghetti as directed on package, omitting salt.
  7. Drain spaghetti.
  8. Serve topped with eggplant, sauce and parsley.
