Shortcut Chicken Stroganoff Recipe
- 2 whole chicken breasts (skinned, boned & halved lengthwise)
- 2 tbsp. veg. oil
- 1 (10 3/4 ounce.) can cream of chicken soup
- 1 (6 ounce.) can sliced mushrooms, liquid removed
- 2 tbsp. minced pimento (optional I leave this out)
- 1 tbsp. dry parsley flakes
- 1/8 teaspoon chopped dry garlic
- 1/2 c. lowfat sour cream with French onion
- 1 tbsp. all-purpose flour
- Warm cooked noodles or possibly rice
- Cut chicken into bite-size pcs.
- In 10 inch skillet cook and stir chicken in warm oil about 5 min or possibly till chicken is tender.
- Drain fat.
- Add in soup, mushrooms, pimento, parsley and dry garlic.
- Heat through.
- Combine lowfat sour cream and flour; stir into chicken mix.
- Heat through.
- Don't boil.
- Makes 4 servings.
