Maurice Salad(Makes 6 Servings.)
- 3/4 c. mayonnaise
- 2 Tbsp. sweet pickle juice
- 2 Tbsp. lemon juice
- 1 Tbsp. Worcestershire sauce
- 3 hard-cooked eggs, minced
- 1/4 c. sweet pickle, minced (do not use relish!)
- 1 large head lettuce
- 1 c. cooked chicken, cut in thin strips
- 1 c. ham, cut in thin strips
- 1 c. Swiss cheese, cut in thin strips
- 1 tomato, cut in thin wedges
- Combine mayonnaise, pickle juice, lemon juice and Worcestershire sauce; stir in eggs, onion and pickle.
- Allow to refrigerate at least 1 hour.
- Wash and break lettuce into bite-size pieces; chill thoroughly.
- At serving time, toss dressing with lettuce and place in salad bowl.
- Top with chicken, ham, cheese and tomato wedges and a few slices of hard-cooked eggs.
