Apple Streusel Coffee Cake Recipe
- 1 c. Brown sugar
- 1 c. Apple, green, peeled, minced
- 1 c. Nuts, minced
- 1/4 c. Flour
- 1 1/2 tsp Cinnamon
- 3 Tbsp. Margarine, melted
- 2 c. Flour
- 1 c. Baking pwdr
- 1 tsp Baking soda
- 1/2 c. Margarine, softened
- 1/2 c. Sugar
- 3 x Egg
- 1 tsp Cinnamon
- 1 tsp Vanilla
- 1/3 c. Orange juice
- 1/2 c. Powdered Sugar
- 2 1/2 tsp Orange juice
- In medium bowl combine the first 6 ingredients, set aside.
- In medium bowl, combine flour, baking pwdr, and baking soda; mix well.
- In large bowl, using an electric mixer, beat butter and sugar till fluffy.
- Add in Large eggs, one at a time, beat well after each addition.
- Add in vanilla and cinnamon.
- Set mixer to low, alternately beat flour mix and orange juice into egg mix.
- Spoon half the batter into greased tube pan.
- Sprinkle with half of the streusel mix.
- Spoon the remaining batter over the steusel, spreading to make an even layer.
- Swirl batter with a knife to make a marble pattern.
- Bake 350 for 15 minutes.
- Remove cake from oven; sprinkle top with remaining steusel topping.
- Return to oven and bake 30-35 min, or possibly till toothpick comes out clean.
- cold completely and invert on to platter, turn cake over so streusel is on top.
- For glaze combine powdered sugar and 2 1/2 tsp orange juice.
- Drizzle glaze over cake.
