Southwestern Beef Strips
- 1 12 lbs beef top sirloin steaks, cut into thin strips
- 1 medium onion, sliced
- 1 medium sweet red pepper, cut into thin strips
- 2 tablespoons taco seasoning
- 18 teaspoon salt
- 18 teaspoon pepper
- 18 teaspoon chili powder
- 2 tablespoons canola oil
- 1 (15 ounce) can black beans, rinsed and drained
- 1 12 cups frozen corn, thawed
- 12 cup picante sauce
- 1 tablespoon cilantro leaf
- 12 ounces hot cooked fettuccine (optional)
- In a large skillet, stir-fry the beef, onion, red pepper strips, taco seasoning, salt, pepper, and chili powder in oil until meat is no longer pink.
- Stir in the beans, corn, picante sauce, and cilantro, and heat through.
- Serve with fettuccine if desired.
