Apple And Walnut Chicken Salad Recipe
- 3 whl Chicken breasts - (about 1 lb each)
- 2 x Tart green apples cored, peeled, and cut into 1/2" slices
- 2 Tbsp. Fresh lemon juice
- 2/3 c. Minced pitted dates
- 1 c. Finely minced celery (use inner stalks) Salt to taste Black pepper, freshly grnd to taste
- 1/2 c. Minced toasted walnuts
- 4 c. A Basic Chicken Stock * see note
- 1 x Celery leaf
- 1 x Parsley sprig
- 1 pch Salt
- 1 Tbsp. Fresh lemon juice
- 1/3 c. Lowfat sour cream
- 1/3 c. Mayonnaise
- 2 Tbsp. Fresh lemon juice
- Poach the chicken breasts in the poaching liquid for 10 min, or possibly just till the pink color is gone throughout.
- The breasts will be hard when pressed with the back of a fork.
- Let cold to room temperature in the liquid.
- Remove and throw away the skin and bones, and shred the chicken into bite-size pcs.
- In a large bowl, toss the apples with 2 Tbsp.
- lemon juice.
- Add in the chicken, dates, and celery.
- Toss to mix well.
- In a small bowl, whisk together the lowfat sour cream, mayonnaise, and 2 Tbsp.
- lemon juice.
- Add in to the chicken mix, along with salt and pepper.
- Toss again to combine well.
- Cover and refrigeratethe salad for 1 hour or possibly more.
- Just before serving, stir in the walnuts.
- This recipe serves 4 to 6.
