Bread-N-Butter Pickles
- 4 qt. sliced cucumbers
- 1/2 c. salt
- ice cubes
- 2 qt. sliced onions
- 1 qt. vinegar
- 4 c. sugar
- 1 Tbsp. celery seed
- 2 Tbsp. whole pickling spice
- 4 Tbsp. mustard seed
- 1 Tbsp. ground ginger
- 1 tsp. turmeric (optional)
- 1/2 tsp. white pepper (optional)
- Gently stir salt into thinly sliced cucumbers.
- Cover with ice cubes.
- Let stand 2 or 3 hours or overnight.
- Add more ice if it melts; drain onions.
- Combine remaining ingredients and bring quickly to a boil; boil 10 minutes.
- Add cucumber and onion slices and bring to boiling point.
- Pack into hot jars.
- Adjust lids. Process in boiling water bath 30 minutes.
- Remove jars from canner and complete seals unless closures are self-sealing type.
- Makes 8 pints.
