Cheese Muffins Revisited

  1. Mix dry ingredients in a bowl.
  2. Separately, mix eggs, oil and yogurt.
  3. Tip: For fluffier texture, beat the mixture lightly.
  4. Add feta cheese and egg mixture to the dry ingredients and mix lightly until consistent, yet fluffy, runny mixture is achieved.
  5. Pour the mixture into greased muffin tins 2/3 full.
  6. Bake 30 minutes at 400 deg F.
