Beef and Veal With Parsley, Swiss Style
- 12 lb stewing beef
- 12 lb stewing veal
- 2 large onions, sliced
- 1 tablespoon flour
- 12 teaspoon salt
- 14 teaspoon pepper
- 1 beef bouillon cube
- 1 cup boiling water
- 14 cup parsley, chopped
- 12 lb noodles, cooked
- Cut meat in small pieces.
- Brown in hot skillet.
- Add onions.
- Cook two or three minutes.
- Add flour and seasonings.
- Mix thoroughly.
- Add bouillon cube and water.
- Cover and simmer over low heat for about one hour.
- Add parsley to meat.
- Serve on hot noodles.
