Very Veggie Quinoa Salad

  1. Bring quinoa and broth to boil in medium saucepan; cover.
  2. Simmer on low heat 15 min.
  3. or until broth is absorbed.
  4. Cool.
  5. Mix quinoa with remaining ingredients just before serving.
