Very Veggie Quinoa Salad
- 1 cup quinoa, uncooked
- 1 can (14.5 oz.) vegetable broth
- 1 can (15 oz.) chickpeas (garbanzo beans), rinsed
- 1 can (11 oz.) corn, drained
- 1 green pepper, chopped
- 1 cup cherry tomatoes, halved
- 5 green onions, sliced
- 1/2 cup ATHENOS Crumbled Feta Cheese with Garlic & Herb
- 1/2 cup KRAFT Greek Vinaigrette Dressing
- 2 Tbsp. sliced black olives
- Bring quinoa and broth to boil in medium saucepan; cover.
- Simmer on low heat 15 min.
- or until broth is absorbed.
- Cool.
- Mix quinoa with remaining ingredients just before serving.
