Purple/Red Onion Salad Dressing - Not on the First Date dressing

  1. Combine in blender at top speed for about a minute, so that all of the onion or shallot is reduced.
  2. The result should be a creamy pink dressing.
  3. Chill overnight in refrigerator.
  4. The result is a mild, oniony dressing with a slightly sweet edge
