Cheese & Pepper Omelet
- 1/4 cup chopped medium green peppers
- 1/4 cup chopped large yellow peppers Target 1 pkg For $2.99 thru 02/06
- 2 Tbsp. chopped chopped onions King Sooper's 1 lb For $0.99 thru 02/09
- 1 whole egg
- 1 egg white
- 2 Tbsp. KRAFT 2% Milk Shredded Mild Cheddar Cheese
- 2 Tbsp. TACO BELL Thick & Chunky Mild Salsa
- 1 slice whole wheat bread, toasted
- 1 tsp. trans fat free canola-based soft margarine
- 1 Tbsp. jam, jelly or preserves
- 1/4 cantaloupe
- 8 fl oz (1 cup) SUNRISE
- Spray medium nonstick skillet with cooking spray.
- Add peppers and onion; cook and stir on medium-high heat 5 min.
- or until tender.
- Remove from skillet; set aside.
- Whisk together egg and egg white with 1 Tbsp.
- water.
- Pour eggs into skillet; cover.
- Cook 6 min.
- Top with pepper mixture and cheese.
- Using spatula, fold egg mixture over filling; cover.
- Cook 3 min.
- or until cheese is melted.
- Serve with salsa.
- Spread toast with margarine and jelly.
- Enjoy toast and melon with the omelet.
- Serve a glass of CRYSTAL LIGHT SUNRISE with meal.
