Orange Spinach Salmon Salad
- 1/4 lb. spinach leaves
- 1 cup canned mandarin oranges (in juice)
- 4 oz. no salt added canned salmon
- 1 Tbsp. frozen orange juice concentrate
- 1 tsp. extra virgin olive oil
- 1/4 tsp. dried oregano leaves
- 3 breadsticks
- Chop or tear spinach and place on plate or in bowl (1/4 pound = 2 cups).
- Drain mandarin oranges, pat dry and place on spinach.
- Top with drained, canned salmon.
- Mix, in small bowl, orange juice concentrate, olive oil and oregano.
- Drizzle dressing over salad.
- Enjoy breadsticks with your salad.
