Easy Southwest Cesar Salad Recipe

  1. Rinse all produce before you start.
  2. Cut Jalapeno in half and mince.
  3. Lightly toast in a small pan and set aside.
  4. Cut your romaine heart in thirds, lengthwise.
  5. Then chop up each row in 1 inch pieces.
  6. Toss in a large salad bowl.
  7. Add corn and black beans
  8. Finely chop Cilantro.
  9. Add to salad bowl
  10. Slice red onion and add to bowl.
  11. Grate cheese and add 1/3 cup to salad
  12. In a small bowl whisk dressing, lime juice and toasted jalapeno.
  13. Toss dressing in with salad.
  14. There should only be enough dressing to very lightly coat the salad.
  15. Trust me; there is A LOT of flavor.
