Stuffed Peppers
- 4 medium green peppers
- 1 1/4 lb. ground chuck
- 3 Tbsp. chopped onion
- 2 Tbsp. chopped sweet red pepper
- 2 Tbsp. chopped green pepper
- 1 (12 oz.) can whole kernel corn
- 1/2 c. tomato juice
- 1/4 c. egg substitute
- 3 Tbsp. oat bran
- 1 Tbsp. chili powder
- 1/2 tsp. garlic powder
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. hot sauce
- Cut peppers in half lengthwise; remove stems and seeds.
- Cook peppers 5 minutes in boiling water.
- Drain well.
- Combine meat and next 3 ingredients in a nonstick skillet.
- Cook over medium heat until meat is browned, stirring to crumble.
- Drain and return to skillet.
- Stir in corn and remaining ingredients.
- Spoon into pepper halves.
- Place peppers in a shallow baking dish.
- Cover and bake at 350u0b0 for 30 minutes.
