Becky B's Moist Chocolate Cake Recipe
- 1 pkt devils food cake mix, pudding in mix
- 1 sm pkg chocolate instant pudding mix
- 1 1/4 c. water
- 1/2 c. oil
- 4 med Large eggs
- 2 c. chocolate chips divided
- 1 c. chocolate chips
- 1/2 c. whipping cream
- CAKE: Preheat oven to 350.
- Mix cake ingredients except for chocolate chips.
- Beat for two min, then mix in chocolate chips.
- Pour batter into greased and floured bundt pan.
- Bake at 350 for 50 - 55 min (Becky goes the full 55 min).
- Toothpick test won't work on this cake.
- Let cold 10 min, then invert onto serving plate.
- ICING: Heat 1 c. chocolate chips and 1/2 c. cream in small saucepan over gentle heat.
- Blend well, remove from heat, and let stand 15 min.
- Drizzle over top of cake, and arrange whole pecans around top of cake.
- NOTES : Becky (my boss) made these for her department for Christmas 1999 in small loaf pans, and the cake was just incredibly moist.
- I'll be using it with a German chocolate frosting for Karen's son David (my nephew) and his sons.
