Cuban Black Beans And Rice Recipe
- 2 cans black beans
- 1 teaspoon garlic
- 1 teaspoon cumin
- 1/4 c. minced onion
- 1 teaspoon extra virgin olive oil
- 1 can minced Rotel tomatoes
- 1 bay leaf
- 2 (5 ounce.) pkg. Vigo yellow rice (Spanish flavor)
- Saute onion in extra virgin olive oil until clear in a large pan.
- Add in garlic, cumin, beans, tomatoes and bay leaf.
- simmer 30- 60 minutes.
- Serve over Vigo brand yellow rice prepared according to package instructions.
