Cheeseburger Soup

  1. In a small stockpot, heat the oil over medium heat.
  2. Add the ground beef, onion, carrots and garlic, breaking up meat until brown.
  3. Add the spices and flour.
  4. Cook another two minutes, stirring often.
  5. Slowly add the stock, stirring constantly, then stir in the potato.
  6. Bring to a boil and simmer 20 minutes.
  7. Stir in the cheese and evaporated milk; cook another 2 minutes.
  8. Ladle soup into bowls, and top with the lettuce and tomato.
