Mexican Meat Loaf
- 1 1/2 lb. ground beef
- 3/4 c. oatmeal
- 1 egg
- 2 tsp. chili powder
- 2 Tbsp. minced onions
- dash of salt and pepper
- 1 (5 1/2 oz.) tomato juice or small can tomato sauce
- 2 tsp. self-rising flour
- 2 Tbsp. margarine
- 1 1/2 c. milk
- 8 slices American cheese or 1 lb. Velveeta
- 1 can Mexicorn, drained
- Combine ground beef, oatmeal, egg, chili powder, onions, salt, pepper and tomato juice or tomato sauce.
- Put in 9 x 12-inch baking dish and bake at 350u0b0 for 20 to 30 minutes.
- Take out and drain juice.
- Melt margarine.
- Add flour to melted margarine in saucepan. Add milk to this mixture.
- Bring to boil.
- Add cheese and Mexicorn. When cheese is melted, pour over meat loaf and bake at 350u0b0 for 20 to 30 minutes.
