Poinsettia Cookies

  1. Beat together powdered sugar and butter.
  2. Add eggs, vanilla and rum extract; mix.
  3. Add flour, salt and shredded coconut; mix well.
  4. Roll into 1-inch balls.
  5. Place on ungreased cookie sheet; flatten cookies with bottom of glass dipped in granulated sugar. Place a butterscotch morsel in center of each cookie.
  6. Take candied cherries and cut in thin wedges.
  7. Place wedges in strips down from butterscotch chips, alternating red and green until you have a circle to resemble a poinsettia.
  8. Bake at 375u0b0 for 12 minutes.
