Poinsettia Cookies
- 2 c. powdered sugar
- 1 c. butter or margarine
- 2 eggs
- 1 tsp. vanilla
- 1/2 tsp. rum extract
- 3 c. flour
- 1 tsp. salt
- 1 c. shredded coconut
- 3/4 c. butterscotch chips
- 1/2 c. red candied cherries
- 1/2 c. green candied cherries
- Beat together powdered sugar and butter.
- Add eggs, vanilla and rum extract; mix.
- Add flour, salt and shredded coconut; mix well.
- Roll into 1-inch balls.
- Place on ungreased cookie sheet; flatten cookies with bottom of glass dipped in granulated sugar. Place a butterscotch morsel in center of each cookie.
- Take candied cherries and cut in thin wedges.
- Place wedges in strips down from butterscotch chips, alternating red and green until you have a circle to resemble a poinsettia.
- Bake at 375u0b0 for 12 minutes.
