Morning Glory Muffins
- 1 1/4 c. sugar
- 2 1/2 c. flour
- 1 tsp. cinnamon
- 2 tsp. soda
- 1/2 tsp. salt
- 1/2 c. flaked coconut
- 1/2 c. golden raisins
- 2 c. shredded carrots
- 1 shredded apple
- 8 oz. crushed pineapple
- 1/2 c. coarsely chopped pecans
- 3 eggs
- 1 tsp. oil
- 1 tsp. vanilla
- Combine the first 5 ingredients and sift together; set aside. Combine fruit and nuts, also set aside.
- Combine eggs, oil and vanilla in mixing bowl and whip on medium speed for approximately 3 minutes or until well blended and light.
- Add fruit and nut mixture, stir to combine.
- Add dry ingredients and stir just until blended.
- Portion into muffin tins, lined with paper.
- (Fill nearly full so they overflow somewhat to look like a chef's hat.)
