Scrambled New York Breakfast Wrap (South Beach Diet P2)
- 1 tablespoon extra virgin olive oil
- 1 medium onion, thinly sliced
- 1 pinch salt
- 1 pinch fresh ground pepper
- 6 large eggs, lightly beaten
- 2 ounces smoked salmon
- 2 ounces reduced-fat cream cheese
- 4 small whole wheat tortillas, 6 in
- In a large nonstick skillet, heat 1 T oil over medium heat.
- Add onions and salt and pepper; cook , stirring occasionally, until just soft, about 5 minutes.
- Add eggs and allow to set for about 10 seconds.
- Sprinkle with salmon and cream cheese cut into small pieced.
- Scramble with eggs until cooked through, about 1 minute.
- Divide scramble among tortillas.
- Roll up burrito style and serve hot.
