Sandy'S Shrimp Creole
- 2 Tbsp. margarine
- 1/2 c. chopped onion
- 2 Tbsp. chopped green pepper
- 1 clove minced garlic
- 1 Tbsp. flour
- 2 (8 oz.) cans tomato sauce
- 1/4 tsp. black pepper
- 1/8 or 1/4 tsp. Tabasco sauce
- 1/2 can water
- 1 tsp. salt
- 1/8 tsp. thyme
- 2 Tbsp. chopped parsley
- 2 1/2 lb. raw shrimp
- Peel, devein and wash shrimp.
- Melt butter in large skillet over medium heat.
- Add onion and green pepper.
- Saute until soft; stir in garlic.
- Remove from heat; blend in flour until smooth. Add tomato sauce and simmer 5 minutes.
- Gradually add water, stirring to blend.
- Add shrimp and all remaining ingredients. Cover and simmer about 40 minutes.
- Serve over hot, cooked rice.
