Three Bean Turkey Soup

  1. Sort, wash and place beans in water 2 inches above beans.
  2. Let soak overnight.
  3. Drain well.
  4. Combine beans and water in kettle. Bring to boil, cover, reduce heat and simmer 1 hour.
  5. Drain beans, reserving 3 cups water.
  6. Transfer 1/3 cup beans to small bowl; mash with fork to make a paste.
