Three Bean Turkey Soup
- 1 c. dried red kidney beans
- 1 c. dried Great Northern beans
- 1 c. dried black beans
- 8 c. water
- 1 lb. ground raw turkey
- 1 c. chopped onion
- 3/4 c. chopped green pepper
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 4 cloves garlic, minced
- 2 (14 1/2 oz.) cans no-salt whole tomatoes, undrained and coarsely chopped
- 1 (8 oz.) can no-salt tomato sauce
- 1 1/2 c. sliced carrot
- 2 tsp. oregano
- 1 tsp. thyme
- 1/2 tsp. chicken flavored bouillon granules
- Sort, wash and place beans in water 2 inches above beans.
- Let soak overnight.
- Drain well.
- Combine beans and water in kettle. Bring to boil, cover, reduce heat and simmer 1 hour.
- Drain beans, reserving 3 cups water.
- Transfer 1/3 cup beans to small bowl; mash with fork to make a paste.
