Coconut Almond Macaroons
- 8 oz almond paste
- 3 egg whites
- 1/3 cup powdered sugar
- 1 1/3 cup flaked coconut
- 1 cup MINUS 1 tablespoon sugar
- Crumble almond paste into a bowl; add sugar; mix well.
- Beat in egg whites until well blended.
- Stir in powdered sugar; then fold in coconut.
- Drop rounded teaspoonfuls onto greased cookie sheets.
- Bake at 350F about 15 minutes; remove from oven.
- Let stand 1 to 2 minutes before removing cookies from pan.
