Buffalo Cauliflower Sloppy Joes
- 1 head Cauliflower
- 1/2 Onion
- 2 Large Carrots
- 2 Celery Stalks
- 1/2 Tablespoons Olive Oil
- 1 can (6 Oz. Size) Tomato Paste
- 1/2 cups Hot Sauce
- 9 Sandwich Buns, To Serve
- Chop the head of cauliflower into tiny pieces that resemble the look of ground meat.
- You could use a food processor for this step.
- Finely chop onion, carrots, and celery (you can also use a food processor).
- Heat olive oil in a large saute pan over medium heat.
- Once heated, add onions and sprinkle with salt.
- Saute for 23 minutes, stirring occasionally, until softened.
- Add the carrots and celery to the pan.
- Saute for 34 minutes, stirring occasionally, until softened.
- Add the cauliflower and stir to incorporate.
- Add the tomato paste and hot sauce.
- Stir to combine.
- Turn the heat to low and cover the pan.
- Let it cook for about 10 minutes, uncovering to stir every couple minutes.
- Serve on buns.
