Moose Mario

  1. Blend vinegar and water; bring to a boil.
  2. Remove from heat. Add carrots, garlic, parsley, cloves and 1 onion; allow to cool. Put moose in this mixture; let marinate for 24 hours in a cool place.
  3. Take moose out of mixture.
  4. Dry it with paper towels; sprinkle with salt and pepper.
  5. Rub in flour.
  6. Put 4 slices of bacon over moose.
  7. Add white onions and place in baking dish. Brown on both sides in hot oven about 30 minutes.
  8. Add all vegetables in which moose marinated; add a little of the liquid. Lower heat to moderate oven.
  9. Baste occasionally with liquid, using enough to make a gravy.
  10. Roast 1 1/2 hours or until tender, then add sherry.
  11. Simmer slowly for 10 more minutes.
