Monkfish with Season Peas
- 2 whole Monkfish, Cleaned And Fillets Separated From The Spine
- 1/2 cups Pure Olive Oil, And Some More To Fry The Fish
- 1 Tablespoon Paprika
- 1 whole Spring Onion Cut In Strips
- 3 pounds, 5 ounces, weight Season Peas, Young Peas Or Sweet Peas
- 1 teaspoon Salt, To Season The Fish And The Peas
- Start marinating the monkfish.
- In a bowl, put the olive oil and the paprika.
- Spread this mixture on the fish fillets.
- Wrap them up in cling wrap.
- Set aside.
- Heat a large frying pan with olive oil and saute the spring onions until golden.
- When the onions are golden, add the peas and cook slowly, stirring constantly for about 10 to 15 minutes.
- Season with salt to taste.
- When you are ready to cook the fish, heat a large frying pan with olive oil and put the fillets in.
- Lightly brown on all sides but be careful not to overcook the fish.
- Season with salt to taste.
- Next, simply serve some peas on the plate, and on them, one fillet of fish.
- Serve immediately.
