Macaroni Vegetable Salad
- 1 (15 1/2 oz.) can red kidney beans
- vinegar
- 1 (8 oz.) package rotini
- 1 (10 oz.) package frozen peas, thawed
- 1 (15 1/2 oz.) can french-style green beans
- 1 (2 oz.) jar sliced pimento
- 1/2 c. green pepper, diced
- 1 c. celery, diced
- 1 small onion, diced
- 2 c. salad dressing
- 1 c. half and half
- 1/2 c. sugar
- 1 tsp. prepared mustard
- Drain kidney beans, place in small bowl, cover with vinegar and let set one hour.
- Drain.
- Cook rotini according to package directions.
- In large bowl, combine beans, rotini, and vegetables. Combine salad dressing, half and half, sugar and mustard; mix well.
- Pour over rotini mixture and mix lightly.
- Chill before serving.
