Good Easy Dessert
- 2 c. boiling water
- 1 (6 oz.) pkg. strawberry Jell-O
- 2 (10 oz.) pkg. frozen strawberries, thawed
- 1 tsp. lemon juice
- 1 c. whipped cream
- 1 pkg. miniature jelly rolls
- Stir boiling water into Jell-O until dissolved.
- Drain berries.
- Puree berries in blender.
- Stir into gelatin along with lemon juice.
- Chill until thick as unbeaten egg white.
- While mixture chills, cut jelly rolls into 1/4-inch slices.
- Line a 2-quart mixing bowl with plastic wrap.
- Arrange jelly roll slices close together to line bowl.
- Fold whipped cream into thickened strawberry mixture until no streaks of white remain.
- Spoon mixture into jelly roll-lined bowl.
- Chill until firm, about 3 to 4 hours.
- Unmold dessert on serving plate.
- Remove plastic wrap. You can substitute an 8 ounce carton of Cool Whip for the whipping cream.
