Peanut Butter Chocolate Cream Pie
- 1/3 cup peanut butter
- 3/4 cup confectioners' sugar
- 1 pie crust, baked
- 3/4 cup granulated sugar
- 3 tbsp. cornstarch
- 1/4 tsp. salt
- 2 cups milk
- 1-1/2 square unsweetened chocolate, broken in pieces
- 3 egg yolks, slightly beaten
- 1 tsp. vanilla
- Whipped cream
- Combine the peanut butter and confectioner's sugar.
- Sprinkle 2/3 of the mixture in the pie crust.
- In a saucepan, combine the granulated sugar, cornstarch, and salt.
- Stir in the milk and the chocolate pieces.
- Bring mixture to a boil; cook and stir one minute.
- Add at least half of the mixture to the beaten egg yolks; return to pan.
- Cook and stir one minute.
- Add the vanilla.
- Pour mixture into crust.
- Cover with plastic wrap and chill.
- Before serving, spread whipped cream over the pie filling and sprinkle the remaining peanut butter mix.
