Fiesta Casserole
- 1 large onion
- 2 Tbsp. salad oil
- 1 1/2 tsp. salt
- 1 clove garlic
- 1 lb. ground beef
- 1 can tomatoes
- 1 can red kidney beans
- 1 tsp. chili powder
- 5 drops hot sauce
- 1 (15 oz.) can chili con carne
- 1 pkg. flour tortillas
- 1 c. grated Cheddar cheese or shredded cheese
- Saute onion and garlic lightly in salad oil in a large skillet; push to one side.
- Brown beef in same skillet.
- Stir in tomatoes, beans, chili, salt, hot sauce and chili powder; heat to boiling.
- Line pan with part of the tortillas.
- Cover with about 1/3 of the sauce.
- Continue to layer tortillas and sauce until used up.
- Cover with cheese.
- Bake in 400u0b0 oven for 30 minutes. Serve bubbling hot.
