Veggie Egg Pitas
- 1 tablespoon vegetable oil
- 2 scallions, sliced
- 4 ounces cherry tomatoes, halved
- 4 large eggs
- 2 whole wheat pita bread, toasted
- Heat the oil in a non-stick pan, add onions and tomatoes and fry for 1 minute
- Beat the eggs with salt and freshly ground black pepper.
- Pour the egg mixture into the pan.
- Cook over a gentle heat for 3 mins, stirring until scrambled and then set aside.
- Cut the pita breads in half and open to make pockets.
- Spoon the egg and tomato mixture into each pocket.
- Serve warm.
