Chicken Cacciatore
- 2 to 3 Tbsp. olive oil
- 2 cloves garlic, minced
- 2 chickens, cut up
- 1 c. onion, sliced
- 2 green peppers
- 1 red pepper
- 1 c. mushrooms
- 2 c. (small) Italian stewed tomatoes
- 1/2 c. red wine
- 1/2 tsp. oregano
- 1/2 tsp. basil
- salt to taste
- 1/4 tsp. seasoned ground pepper
- 1/2 c. black or green olives
- 1/2 c. grated Locatelli cheese
- Remove skin from chicken pieces.
- Brown in olive oil.
- Add garlic, minced. When chicken is browned, add the following: onions, garlic, both peppers, mushrooms and tomatoes.
- Simmer until all are soft.
- Add red wine.
- Add oregano, basil, salt and pepper. Simmer until consistency of spaghetti sauce.
- Add more wine if too thick.
- Add either black olives or green (pitted).
- Before serving, add 1/2 cup grated Locatelli cheese.
