Uncooked Apricot Jam Recipe

  1. Wash, pit and mash apricots.
  2. Measure pulp.
  3. Mash bananas and combine with lemon juice and rind; add in pectin; stir vigorously with electric beater.
  4. Let stand 20 min.
  5. Add in corn syrup and mix well.
  6. Add in sugar; stir till dissolved.
  7. Pour into containers and freeze.
  8. Makes 4 pints.
