Poppy Seed Mini Muffins

  1. In a large bowl, combine flour, sugar, baking powder, baking soda and salt; set aside.
  2. Combine remaining ingredients; mix well.
  3. Stir into dry ingredients just until moistened.
  4. Fill greased or paper lined mini muffin cups two thirds full.
  5. Bake at 400F for 12-15 minutes or until muffins test done.
  6. Cool in pan 10 minutes before removing to a wire rack.
