Henrietta Hunt Morgan'S Black Cake(Lexington Recipe)
- 12 eggs
- 1 lb. sugar
- 1 lb. flour
- 1 lb. butter
- 1 lb. currants
- 4 lb. raisins, seeded and split
- 3/4 lb. citron
- 1 lb. candied fruit
- 1 lb. preserved ginger
- 1 lb. almonds, blanched
- 1/2 coffee cup cinnamon
- 1/2 coffee cup grated nutmeg
- 1/2 coffee cup golden syrup
- 1 level tsp. soda
- 1 tumbler good whiskey
- Mix one tablespoon of flour, one teaspoon salt, one teaspoon mustard, one tablespoon sugar and a speck of cayenne pepper.
- Add 2 tablespoons of melted butter, two egg yolks and three fourths cup of milk.
- Cook in a double boiler until it thickens, stirring constantly.
- Then add three tablespoons of vinegar and boil one minute.
