Sweet Potato Casserole
- 2 (40 oz.) cans sweet potatoes or yams, drained and mashed
- 3 eggs, lightly beaten
- 2 sticks softened margarine
- 1 c. brown sugar
- 1 c. granulated sugar
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg or cloves
- 1 c. Grape-Nuts cereal
- 1 c. chopped pecans
- 1 1/2 c. miniature marshmallows
- Preheat oven to 350u0b0.
- Lightly grease a 9 x 13-inch casserole dish.
- Put mashed potatoes in dish.
- Beat eggs lightly; add margarine, brown sugar, granulated sugar, cinnamon, nutmeg or cloves and cereal.
- Pour over potatoes.
- Bake at 350u0b0 for 30 minutes.
- Stir and cut egg mixture into potatoes.
- Bake 30 minutes more.
- Top with chopped pecans and marshmallows.
- Broil until lightly browned.
- Serves 8 to 10.
