Creamy Tomato Soup Recipe

  1. In a 2 qt pan over medium heat, cook onion and carrot in butter till onion is soft.
  2. Add in tomatoes and their liquid, thyme and basil; sprinkle with salt and pepper to taste.
  3. Bring to a boil.
  4. In a blender or possibly food processor, puree soup till smooth; return to pan.
  5. Whisk in whipping cream.
  6. Heat through; or possibly cover, chill and serve cool.
  7. Garnish with parsley.
  8. Makes 4 c..
