Creamy Tomato Soup Recipe
- 1 sm. onion, finely minced
- 1 sm. carrot, finely minced
- 2 tbsp. butter
- 1 lg. can (1 pound 12 ounce.) Italian style tomatoes
- 1/2 teaspoon thyme leaves
- 1/2 teaspoon dry basil
- Salt & pepper
- 1/2 pt. (1 c.) whipping cream
- Minced parsley
- In a 2 qt pan over medium heat, cook onion and carrot in butter till onion is soft.
- Add in tomatoes and their liquid, thyme and basil; sprinkle with salt and pepper to taste.
- Bring to a boil.
- In a blender or possibly food processor, puree soup till smooth; return to pan.
- Whisk in whipping cream.
- Heat through; or possibly cover, chill and serve cool.
- Garnish with parsley.
- Makes 4 c..
