Italian Chicken Simmer

  1. Heat oil in large nonstick skillet on medium-high heat.
  2. Add chicken to skillet; cook 10 min.
  3. or until evenly browned, turning occasionally.
  4. Combine tomatoes and tomato paste; pour over chicken.
  5. Add peppers; cover.
  6. Simmer on medium-low heat 20 min.
  7. or until chicken is done (165F), stirring occasionally.
  8. Remove from heat.
  9. Stir in Parmesan.
  10. Top with shredded cheese; let stand, covered, until melted.
