Apricot Crunch Surprise Recipe

  1. Preheat the grill to a moderate heat.
  2. Place the apricots on a baking sheet and sprinkle with the sugar and lemon juice.
  3. Grill for 5-8 min, till the sugar caramelises and the fruit starts to colour.
  4. Leave to cold.
  5. Combine the wholewheat biscuits with the sugar and place on a baking sheet and grill for 1-2 min, turning frequently.
  6. Leave to cold.
  7. Place the caramelised apricots in 2 suitable sized sundae dishes or possibly onto serving plates then top with the creme fraiche and sprinkle with the wholewheat biscuit topping.
  8. Serve immediately.
  9. NOTES : A fruity style dessert comprising of caramelised apricots, creme fraiche and crunchy wholewheat crumble.
