Beets With Dill And Feta Recipe
- 1 bn Beets (4-5)
- 1/4 c. Feta cheese (I like more)
- 1/2 x A lemon , juice of Extra virgin olive oil Fresh dill - minced
- 1.
- Cook the beets in boiling water till just tender (not mushy)
- 2.
- Remove skins and cut into small cubes.
- 3.
- Place in a bow, drizzle with extra virgin olive oil
- (not too much), lemon juice and dill to taste; toss.
- 4.
- Sprinkle with crumbled feta cheese and serve.
- The contrast between the sweet beets and the salty feta is awesome !
