Beets With Dill And Feta Recipe

  2. Cook the beets in boiling water till just tender (not mushy)

  4. Remove skins and cut into small cubes.

  6. Place in a bow, drizzle with extra virgin olive oil
  7. (not too much), lemon juice and dill to taste; toss.

  9. Sprinkle with crumbled feta cheese and serve.
  10. The contrast between the sweet beets and the salty feta is awesome !
