Oriental Beef
- 1 lb. round steak, 3/4-inch thick
- small amount oil
- 1 c. water
- 2 Tbsp. soy sauce
- chopped onion
- 1 c. carrot slices
- 1 c. celery slices
- 1/2 green pepper, cut in strips
- 1/2 lb. fresh mushrooms, sliced
- 1 small can water chestnuts, sliced
- salt to taste
- 1/4 c. cold water
- 2 Tbsp. cornstarch
- Cut meat into strips, 1/4-inch wide and 2 to 3 inches long. Brown in small amount of oil; drain.
- Add 1 cup water, soy sauce and chopped onion.
- Cover and simmer 45 minutes.
- Then add carrot, celery, green pepper, mushrooms, water chestnuts and salt to taste.
- Cover and cook 15 to 20 minutes; do not overcook.
- Combine cold water and cornstarch and gradually add to hot meat and vegetables, stirring constantly until mixture boils and thickens. Serve over rice.
- Yields 4 servings.
