Bran Flax Muffins

  1. Mix together all the dry ingredients in a large bowl.
  2. Stir in carrots, apples, raisins and nuts.
  3. Combine milk, beaten eggs and vanilla.
  4. Pour liquid ingredients into dry, stir until ingredients are moistened.
  5. Do not over mix.
  6. fill muffin cups 3/4 full.
  7. Bake at 350 for 12-15 minute.
  8. makes 30 mini muffins.
  9. Note: Directions are for regular sized muffins and are to yield 15 medium muffins, baked for 15-20 minute Time was adjusted for mini's.
