Bran Flax Muffins
- 1 12 cups flour
- 34 cup flax seed meal
- 34 cup oat bran
- 12 cup brown sugar substitute
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 12 teaspoon salt
- 2 teaspoons cinnamon
- 1 12 cups carrots, shredded
- 2 apples, peeled and shredded
- 12 cup raisins (optional)
- 12 cup nuts, chopped
- 34 cup skim milk
- 2 eggs, beaten
- 1 teaspoon vanilla
- Mix together all the dry ingredients in a large bowl.
- Stir in carrots, apples, raisins and nuts.
- Combine milk, beaten eggs and vanilla.
- Pour liquid ingredients into dry, stir until ingredients are moistened.
- Do not over mix.
- fill muffin cups 3/4 full.
- Bake at 350 for 12-15 minute.
- makes 30 mini muffins.
- Note: Directions are for regular sized muffins and are to yield 15 medium muffins, baked for 15-20 minute Time was adjusted for mini's.
