Cherokee Casserole
- 1 lb. ground beef
- 1 tsp. cooking oil
- 3/4 c. chopped onions
- 1 1/2 tsp. salt
- 1/8 tsp. pepper
- dash of garlic powder
- 1/8 tsp. thyme
- 1/8 tsp. oregano
- 1/2 small bay leaf, crushed
- 1 pt. cooked tomatoes
- 1 can reduced fat cream of mushroom soup
- 1/2 c. regular rice, uncooked
- 1 (No. 2) can corn
- 3 Tbsp. melted margarine
- 1/2 c. grated cheese
- 4 stuffed olives, sliced
- Cook beef in oil until light colored.
- Drain.
- Add onion and cook until transparent.
- Add remaining ingredients, except cheese and olives.
- Mix well and spoon into a 3-quart baking dish.
- Top with cheese, cover and bake 45 minutes at 350u0b0.
- Remove from oven and garnish with olives.
- Yield:
- 4 to 6 servings.
