Sugar Free Peanut Butter Cup Cookies
- 1- 1/2 cup Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 1/2 cups Unsalted Butter
- 3/4 cups Splenda Brown Sugar Blend
- 1/2 cups Splenda
- 1 whole Large Egg
- 1 teaspoon Vanilla Extract
- 1 bag (12oz) Sugar Free Peanut Butter Cups, Coarsely Chopped

- Heat oven to 375 F. Line 2 baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda and salt.

- Using electric mixer, beat butter, Splenda Brown Sugar and Splenda in large bowl until creamy.
- Add egg and vanilla and beat to combine.
- Gradually add flour mixture, mixing until just incorporated.
- Fold in peanut butter cup pieces.

- Drop tablespoon-sized mounds of dough 2 inches apart onto the prepared baking sheets.
- Bake until light brown around the edges, about 12 to 15 minutes.
- Transfer to a cooling rack and then dig in (whether you wait for them to cool or not is your call).
